Steven Rivas is one of our youngest members in the Neighbors & Crops program. He began growing coffee after receiving his degree in agronomy. The farm, El Paraíso, lays at 1700 meters above sea level. You can find it on a hill very near the La Palma & El Tucán wet mill.
We enjoy working with young farmers like Stiven who put their theory and knowledge of agriculture into practice. In the end, we have been able to help each other when it comes to adapting our climate and changes in the environment and soil.
For us, it would be a blessing to continue working with young farmers interested in keeping our traditions alive! Supporting Stiven gets us one step closer to that goal. Thanks for your support.
About the Neighbors and Crops Program:
By working collaboratively with more than 100 coffee-growing families located within a 10km radius of our farm, we buy and process exceptional coffee cherries while controlling every step of the process.
The program is designed to offer our neighboring coffee-growing families various different benefits (monetary and non-monetary) that help us incentivize them to become an active part of this industry and to revitalize the coffee-growing culture in our region
Together we can commit to the highest quality standards possible while focusing on innovative practices that protect our ecosystem, our land, our home. At the end of the day, we as farmers are the guardians of our own environment.
Grind: Medium (on Baratza Encore / Virtuoso 14)
Water: 400ml of at 202 degrees Fahrenheit
Bloom: 50ml of water saturating the coffee. Let sit for 1 minute
2nd Pour: Pour in circles until you're at 100ml
Final Pulse Pours: Add 20-40ml of water each pour until reaching 300ml. Allow coffee to drain almost fully between pours.
Final Brew Time: 4 minutes
