About the Process:

The Zero Oxygen process unfolds within a meticulously regulated fermentation chamber. Oxygen is deliberately replaced with a saturation of CO2. This environment devoid of oxygen enhances not just the vibrancy of fruits and florals but also the textures.

Brew Suggestions:

15g dose
250 ml water at 205 F 
2:30 duration, 
50g, 30 second bloom with two pours of 100 g. (this coffee is very dense and thus produces more fines, so this method mitigates filter clogging) 

Suggested brewer: Overall we preferred a flat bottom brewer for a more balanced cup:
Fellow Stagg [X] or Orea  - these brewers are faster flowing and help with clogging. Kalita and April brewers produced similar cups.
This recipe averaged extractions from 20-22% so there's room to grind coarser if you are having issues with fines, or just prefer lower extractions.
