This years art is all about taking a trip down the Horror section at your local video rental store. Peeking at those horrifying and grotesque covers that made you feel like you might just die of fight if you were to actually take the cursed VHS home. Each coffee will come in a bag paying tribute to some of (what we see as) the best psychedelic horror movies ever to be made. Movies that may just change you one way or the other after watching them! Nativo Nogales

CATEGORY : Innovation

PROCESS : Natural

The process begins with the meticulous selection of ripe beans and then moves on to a density-based sorting process. The beans undergo thermal shock, being exposed to 80 degrees Celsius for 20 seconds, followed by rapid cooling with cold water after 3 to 5 minutes to enhance sugar development. Next, the beans go through a 120-hour fermentation process to enhance their flavor profile even more. The quality enhancement process is completed by sun-drying the coffee beans for 15 days.

Citric Fresno

VARIETY:  Caturra 

PROCESS:  Semi-Washed

This coffee has a semi-washed process, with a 60-hour fermentation in mucilage and dried for 25 days on raised beds with a 2-stage drying protocol to highlight the brightness and citrus flavors.

Pink Borbon Creation

CATEGORY:  Microlots 

VARIETY: Pink Borbon 

PROCESS:  Semi-Washed 

The process of the Pink Borbon Creation coffee begins with the meticulous selection of ripe Pink Borbon cherries, ensuring exceptional quality from the farms of Los Pinos and La Primavera in Huila, managed by farmers Edier Perdomo and Diego Horta. The beans undergo a 24-hour pre-fermentation in cherry, followed by a 36-hour anaerobic fermentation in bags, snug in mucilage blankets, which enhances their unique flavor profile. The drying process takes place on raised beds for 15 days, ensuring optimal moisture levels. 

Honey Mountain

CATEGORY:  Microlots 

VARIETY:  Caturra 

PROCESS:  Honey

This coffee is processed by several farmers at Tablón de Gómez with a similar process (differing only in the number of days to be dried, but averaging 18 days). This consists of a honey process with a short fermentation of 48 hours in mucilage (short because, at this altitude, it is not as fast as at lower altitudes), followed by an average of 18 days dried on patios and raised beds, and homogenized in a stabilization process for 30 days before milling.

Java Blossom

CATEGORY:  Reserve 

VARIETY:  Java 

PROCESS:  Natural Carbonic Maceration

This Java is a first-time Carbonic Maceration process done with this variety at El Vergel. It consists of 96 hours where CO2 is induced at the beginning up to 6 bars to generate high pressure, break down the cascara, or macerate, so the fermentation process undergoes easily for the microorganisms and creates an anaerobic state. Afterwards, it is sun-dried on raised beds for 25 days and stabilized for 45 days in GrainPro bags before milling.
